Open Settings → Account. The page shows the name and email on the signed-in account.
Choose Sign out there, or use Sign Out at the bottom of the sidebar. On the Mac app, sign out from the app menu.
Calendars are managed separately under Settings → Calendar. See Connect your calendar.
